Chaque décision prise, de la taille des vignes à la vinification, est guidée par le respect de notre environnement et la volonté de produire des vins de grande qualité tout en préservant notre héritage naturel pour les générations futures.


Although Domaine Jean Monnier et Fils is not certified organic, we are committed to environmentally respectful practices. Our vineyards are located in a region particularly sensitive to vine diseases suchas oïdium (powdery mildew) and mildiou (downy mildew). This requires careful attention and a flexible approach known in France as lutte raisonnée—or integrated vineyard management. This method consists in tailoring treatments only when strictly necessary, based on a detailed assessment of the real risks at the level of each parcel. Whether through close monitoring of the vines, applying treatments at the right time and in the right quantity, preserving natural allies, or opting for alternative solutions whenever possible, every intervention is carefully considered.

All our soils are cultivated without chemical herbicides, relying instead on manual and mechanical ploughing. This approach preserves soil biodiversity and maintains its natural vitality—improving structure, increasing water retention, and preventing erosion.

Since 2020, Domaine Jean Monnier et Fils has been certified Haute Valeur Environnementale (HVE). This French label promotes environmentally friendly practices and the protection of nature. It is based on four key indicators: biodiversity, fertilisation, phytosanitary strategy, and water management. The HVE certification ensures that we are fully aware of our environmental responsibilities and strive to minimise the impact of viticulture—on our estate and on the environment as a whole. The annual vendanges (Harvest) are a highlight of the year, when the whole family gathers to harvest the grapes. Pickers from across France join us, sharing moments of conviviality and enthusiasm in this crucial stage of the winemaking process. At the domaine, all harvesting is carried out by hand to ensure that grapes are picked at optimal ripeness, guaranteeing exceptional quality. Each parcel is carefully harvested to avoid over-extraction and to preserve the delicate aromas and finesse of our wines.
Winemaking at the domaine is a subtle blend of tradition and innovation. Our techniques are designed to enhance the finesse and nuances of each wine, without overshadowing them through excessive intervention. The aim is to respect and magnify the natural expression of each cuvée, allowing it to fully reflect the character of the Burgundian terroir.
